Char-broilers and outdoor grills can be broken down into three unique types, char rock, radiant, and outdoor charcoal. Char rock broilers & grills transfer heat from the burner to briquettes and then transfers to the cooking area. Char rock style charbroilers require changing the briquettes on occasion, but is an overall cheaper initial investment for your business.

Radiant heat charbroilers transfer heat directly from the burner into the cooking area. Radiant heat charbroilers are a more expensive option, but require little maintenance time and expense once it is purchased.

Charcoal powered grills provide very intense flavors and heat while minimizing smoke coming from the briquettes. Charcoal is actually a type of wood that has been refined in a process where it is heated in the absence of oxygen to remove any volatile hydrocarbons in the wood. A charcoal fire takes about 30-45 minutes to achieve a proper cooking temperature and an ash gray color will form over the briquettes when they are ready to be used.

Cooking Surfaces on Char-broilers and Grills

Grills and charbroilers have two types of cooking surfaces for you to choose from. Cast iron and stainless steel are both grid surface options, both of which have the unique qualities and benefits. Cast iron is a metal which is made by melting pig iron with substantial quantities of scrap iron and metal. Cast iron is extremely wear resistant, making it ideal for heavy-duty, frequent use. Cast iron is slightly more difficult to clean that stainless steel, but is an excellent choice for cooking surfaces.

Stainless steel grid areas are hard, easy to clean cooking surfaces that are extremely durable. Stainless steel cooking areas are nearly maintenance free because they are scratch and dent resistant. These grids can be easily wiped off after each use and are perfect for grilling and charbroiling surfaces.

Commercial grills and char-broilers have varying BTU values, depending on the specific unit purchased. Char rock units have BTUs ranging from 72, 000-300,000. Radiant heat heavy duty charbroilers and grills have BTUs ranging from 72,000-300,000, while medium duty units have BTUs ranging from 35,000-160,000. Outdoor units have BTUs between 80,000-160,000.
