This Southbend KELS-40 stationary kettle has a 40-gallon capacity, and its stainless steel cover is hinged, domed, and counterbalanced. A steam jacket around the lower portion of the kettle secures water between two pieces of stainless steel, and this water is used to create steam and cook food in the kettle. Because of this design, food is evenly heated and hot spots are eliminated, preventing burnt food. For durability, the unit is constructed of stainless steel, and it is supported on three tubular stainless steel legs that are adjustable.

Using mounted thermostatic controls, operators can set the temperature between 165 and 285 degrees Fahrenheit. A low water shut-off feature turns the Southbend KELS-40 stationary kettle off if water is low to prevent overheating, and if temperatures exceed the safe range, the safety shut-off turns the unit off. Vacuum and pressure gauge controls ensure monitoring the kettle's status is straightforward.
