Southbend BGLM-40 Description

Made for high-volume cooking applications, the Southbend BGLM-40 tilting braising pan has a 40-gallon capacity. Its stainless steel clad plate evenly heats product, and the pan's coved corners prevent debris from getting stuck and harboring bacteria. For simplified temperature control, the solid-state thermostat operates from 100 to 450 degrees Fahrenheit. With this temperature range and versatile pan design, operators can use this skillet to fry, steam, boil, braise, and simmer food.

After food is cooked in the Southbend BGLM-40 manual tilt skillet, operators can remove it by tilting the pan, and at an angle adjustable with the hand-tilt crank, the contents flow toward the sloped front. Product flows out the pour lip and into a container held under the opening while a removable strainer can be placed over the pouring lip to separate liquid from the solid food when necessary. Along with the rest of the exterior, the cover on this unit is made of stainless steel, and because it is spring assisted, it opens and closes smoothly with a full-width handle. The unit has adjustable feet on the front and rear, with flanged rear feet that secure to the floor.
