With a 10-pound oil capacity, the Vollrath 40706 Cayenne® countertop fryer is made for small-volume operations and can be used to fry product that is not needed often. Made of one-piece stainless steel, the frying vat has a lift-out design that supports the cleaning process. Fryer baskets are included with the unit, and they have a small design that accommodates two batches simultaneously. Stay-cool handles on the baskets protect the operator from high heat, but the temperature can be set on the adjustable thermostat. The maximum level is 375 degrees Fahrenheit, and if the unit exceeds 390 degrees Fahrenheit, it automatically shuts off. Designed to heat up quickly, the Vollrath 40706 electric fryer efficiently recovers temperatures.
