The Vollrath 20300 Super Pan V® false bottom can be placed inside a fractional steam pan, lifting food off the pan's bottom to increase ventilation and decrease sogginess. This is especially useful for foods such as fried chicken and french fries, which can become oversaturated if left sitting in liquid. Made of stainless steel, this grate has increased durability and resistance to scratching and rusting.
