The tank is constructed of welded stainless steel with galvanized sides and back. The long, lasting high temperature alloy stainless steel heat baffles are mounted in the exchanger tubes to provide maximum heating and combustion efficiency. The thermostat maintains a temperature between 200-400 degrees and the integrated gas control valve acts as a manual and pilot valve, gas filter, pressure regulator and automatic main valve. The temperature limit automatically shuts off all gas flow if the fryer temperature exceeds 450/410 degrees.
