The Groen EE-20 stationary kettle can hold 20 gallons, meaning it is ideal for cooking large volumes of food and is a great alternative to a stock pot range because it requires less labor and monitoring while products cook. It is a self-contained steam unit, so it is already charged with pure water in its hollow jacket. When the kettle is heated, this water heats up and turns into steam that cooks the food while the jacket surrounds two-thirds of the unit instead of covering the entire machine. This saves power and water, though it does not heat quite as evenly as the full jacket. In the kettle, the liner is made of 316 stainless steel—a material that is highly resistant to corrosion for use with acidic product. Because the unit is sheathed in stainless steel and insulated, it retains heat and maintains a cool-to-the-touch exterior.

This Groen EE-20 steam-jacketed kettle has a 2-inch draw-off valve so operators can drain stock and other liquids from product. With the valve, users can also clean the interior by draining the water out, and a perforated strainer keeps large debris out of the valve to prevent clogging. Its control system is set in an accessible position and enclosed in stainless steel for protection against splashing. A thermostat controls set temperatures between 150 and 270 degrees Fahrenheit, shutting the contactor on and off to operate the heating element.
