Because this Alto-Shaam 1000-TH/1 cook-and-hold oven has two compartments with eight pan positions, it can hold (16) 18-inch by 26-inch by 1-inch-deep pans at a time. Each compartment is controlled individually with its own cook temperature knob and hold temperature knob. Featuring Halo Heat® this unit circulates air evenly without a fan, enabling cooked food to retain its moisture while improving the taste and quality of product. After cooking, the unit automatically moves to hold mode, warming food until users retrieve it.

The Alto-Shaam 1000-TH/1 cook-and-hold oven compartments are made of smooth stainless steel, while the handles are protected from potentially harmful microbes. The oven also features drip trays to catch moisture for fast removal at closing time. This simple-to-clean design encourages users to clean it regularly, keeping the oven free of bacteria and mold.
