Its 14-inch blade is made of high-carbon steel—a metal that resists corrosion and stains. Along the sides of the blade, small indentions act as air pockets, preventing thin slices of meat from sticking on its sides when carving. This knife's handle comes in white to reduce the risk of cross contamination through color coding.
