Its interior is lined with rust-proof aluminum and is insulated with 2 inches of polyurethane foam to maintain temperatures between 36 and 38 degrees Fahrenheit. Two self-closing drawers with magnetic gaskets hold ingredients in 4-inch-deep or 6-inch-deep food pans. The Beverage-Air DPD46-2 pizza prep table has a 19-inch-wide cutting board that can be removed for cleaning, and its top cold pan storage accommodates pans as deep as 6 inches. To provide movement, four 3-inch casters are included, with brakes on two for stability.
