The Paderno 11109-28 Grand Gourmet braising pot has a durable stainless steel construction with a 7-quart capacity. It has a wide and low design that helps with the dispersion of steam for searing and poaching. The welded stainless steel handles are hollow, staying cool to the touch to prevent accidents while handling. Constructed of aluminum layered between stainless steel, the tri-metal bottom will concave when cold and flatten when hot for effective heat distribution. Perfect for home kitchen
I use this more often than my Le Creuset dutch oven because of its perfect depth. Not too deep, not too shallow. It sears meat, caramelizes onions, reduces stews, and cleans up all better than anything I've used...and I've got a kitchen full of the best equipment out there. The heavy bottomed, stainless rondeau is what I would recommend to anyone looking to start cooking and collecting kitchen must haves. This size fits perfect across my 12" gas stove burners and isn't too heavy to lift to transfer to the oven, or to pour into a blender. The wide diameter and shallow sides allow encourage evaporation and there is plenty of space for larger recipes. I'm glad I got the 7 quart size because any smaller and I might not be able to make recipes that you can serve half immediately and freeze the other half for later. Perfect.
