AccuTemp ACGL-40E 40 gal Steam Kettle - Stationary, 2/3 Jacket, Liquid Propane

The AccuTemp ACGL-40E Edge™ stationary steam kettle's integrally mounted controls include a thermostat, power switch, pilot switch, low-water light, vacuum and pressure gauge, safety relief valve, and low-water shut-off. A hemispherical design on the bottom enhances the circulation of heat, and because the unit is constructed of 316 stainless steel, it is ideal for cooking food with a high acid content. It has a No. 4 finish on its fully welded stainless steel exterior.

This steam kettle runs on LP gas and operates between 165 and 285 degrees Fahrenheit. Its 2-inch tangent draw-off valve drains contents and keeps the water clean. Purified water is contained in the factory-sealed jacket, and the entire kettle is self-contained with a double-wall interior. Support for the unit is provided by its 1 5⁄8-inch-diameter stainless steel pipe legs.

The AccuTemp ACGL-40E stationary kettle can be used to prepare soups, stews, gravies, puddings, sauces, pasta, eggs, and rice. It can also braise meats and boil large quantities of water. Cook-chill operations use units like this one to cook and rethermalize food because they provide more efficient transfer of heat and a larger product contact surface than a stockpot. Because they prevent scorching, kettles are ideal for reducing product loss with heat-sensitive foods.
