The AccuTemp ACEL-40 Edge™ stationary steam kettle's hemispherical design enhances the circulation of heat. Water is kept clean and contents are drained by the 2-inch draw-off valve, and the whole unit can be secured to the floor with its three stainless steel, tubular legs, which have four-hole, adjustable flanged feet. This self-generating kettle is equipped with removable elements. Its factory-sealed jacket enclosure contains purified water, and its 316 stainless steel liner is ideal for foods with high acid content, such as barbeque or marinara sauce.

The durable design of the stationary kettle avoids pitting and lengthens the unit's life. Constructed of 304 stainless steel, the kettle has integrally mounted controls that include a power switch, thermostat, pilot light, low-water light, vacuum and pressure gauge, safety relief valve, and low-water shut-off. Its operating temperature ranges between 165 and 285 degrees Fahrenheit.

This AccuTemp ACEL-40 kettle has a maximum operating pressure of 50 PSI, and a steam jacket around the lower two-thirds of the unit is formed by the double-wall kettle interior. The kettle does not require steam or condensate return plumbing and operates at higher pressures than other models. Ideal for use by chain and independent restaurants, schools, nursing homes, or even smaller foodservice operations, this unit is an efficient and effective alternative to stockpot range-top cooking.
