To the next generation
I just used this knife to bone a 15 lb turkey for Thanksgiving and 3 5 lb chickens for Christmas dinner. We had grilled chicken, and chicken noodle soup. Boning poultry is a pleasure with a small sharp knife and this knife will take an edge and keep it thru 3 chickens without any problem at all. The smallness of the knife makes it easy to get up close to the bones and not waste any meat, especially the thighs and legs. I have 3 Victorinox boning knives, this is my favorite because of it's size (it's the smallest). I love these knives because they sharpen well, keep an edge, and are not expensive. Most knives they sell in box stores won't even take an edge. These will.
