The Doyon JA8 Jet-Air convection oven cooks items evenly and quickly with its reversing, two-speed fan. 99 programmable EBake modes can be used to prepare common menu items, while there is also a setting to enable manual cooking. The oven takes 15 minutes to preheat and the digital controls are used to adjust temperatures to 500 degrees Fahrenheit and lower. The steam shot and pulse injection system enables users to add either a single shot of steam or steam the items continuously.

The stainless steel construction of this Doyon JA8 Jet-Air convection oven makes it strong for high-volume use and simplifies cleaning. The oven is sealed, insulated, and has heat-reflective thermal glass doors that increase heating efficiency. It can hold eight 18-inch by 26-inch pans and has a 3 1⁄2-inch space between each shelf. The contents are made visible by the illuminated interior and when the doors are opened, the door switch turns off the blower fan. The oven has magnetic latches to hold the doors closed and a digital timer that keeps track of cooking times to prevent overcooking.
