Doyon E236 Description
The Doyon E236 roll-in proofer is constructed of stainless steel for user-friendly cleaning, and its aluminum floor will not scratch or stain. Bright lights shine on the proofer's interior, so the operator can see inside the unit without interrupting the proofing process by opening the unit's doors. To support monitoring, the countdown timer and heat and humidity controls are electric. Temperatures range from 90 to 110 degrees Fahrenheit, while humidity is maintained at 95 percent. This unit can hold either a single rack and 10 shelves or two single racks.
