This easy-to-use proofing/holding cabinet features the CM2000 module which can change from proofing to holding and vice versa by simply flipping a switch. The temperature and humidity can be adjusted individually. With this combination proofing/holding cabinet, temperature is regulated throughout the unit by blower-forced air circulation.

The full length, see-through door allows you to view the contents of the cabinet without actually having to open the door, conserving both time and energy.
